Tam Cake is a popular junk food of many places in Mekong Delta; however; Tam Cake in Ngan Dua Town, Bac Lieu Province is the most delicious. To make Tam cake, people grind rice and then blend with cool water to make watery rice flour. This mixture will be cooked with low heat in a long time.

Finally, people will cool the mixture down and clay the powder into small fibrils by hand. Due to the uneven of fibrils, Tam cake is softer and more delicious than one made by machine. Especially, Tam Cake is served with special dumpling made from pork and pig’s liver. To make dumpling, people grind pork and pig’s liver and clay seasoned with sugar, garlic, fried onion and pepper together with a bit rice flour and seasoning powder. This mixture will be clayed in ball shape and then steamed. A plate of Tam Cake include many things: Tam cake, sliced pig’s skin, julienne cucumber, spinach, bean sprouts, sliced pork, fried groundnuts, and dumpling covered by tomato sauce.
